Seamus O Sullivan Master Butchers 6/7 Manor West, Tralee, Co. Kerry is the home of Sulmeat.com. O Sullivan's Master Butchers was established in 1990 by Seamus O Sullivan. Seamus comes from an agricultural background in Derrymore, a townland west of Tralee on the Dingle Peninsula. Having finished his Secondary Education at Tralee CBS, Seamus attended the year long full-time course in Retail Meat/ Meat Technology at the College of Marketing and Design in Dublin under Sylvester Byrne.

He completed his apprenticeship at Pat Smyth Master Butchers, Navan, Co. Meath. He then worked in his native Tralee for a short period until he went to the USA . He spent a number of years in New York where he worked in The Meat Emporium on Broadway and at Emerald Meats on 14 th Street . He gained a lot of valuable experience in all aspects of the meat trade.

In 1990 Seamus returned to Ireland and founded Seamus O Sullivan Master Butchers in Tralee . Like all business start-ups it took long hours of hard work to get the enterprise established. Eventually business began to flourish.
The number of satisfied customers was growing steadily and an outstanding team was developing at O'Sullivans. Michael Flynn from Stradbally, Castlegregory joined in 1993 as General Manager. Michael had trained under Tom Lynch at Garveys in Tralee and worked with them for 11 years. Timothy Flaherty from Tralee is our current Assistant Manager. Timothy served his full apprenticeship at O'Sullivans before working for a number of years as a qualified butcher.
Today O'Sullivans employs a team of twenty highly skilled and highly motivated craftspeople. The shop has been expanded, refitted and upgraded on a number of occasions in the intervening years. It is clearly one of the finest – if not the finest – butchering establishments in the country.

Through the years Seamus O Sullivan Master Butchers have had customers from all over Ireland . The reaction from those customers has been the almost entirely identical – "it's a shame your shop is not nearer because it's just brilliant". That got the people at O'Sullivan's thinking “How can we make out meats available to these customers on a regular basis". Maybe we should open more shops around the country”. Serious thought was put into the possibility. However, turning a fine butcher shop, which provides premium quality meat and excellent service, into a chain of shops isn't quite as easy as shops who sell generic products or services. O'Sullivan's has earned its reputation for its excellent quality and service. Then somebody suggested “why don't we deliver our meats to the four corners of Ireland ” this comment certainly grabbed everybody's attention. Three critical problems were identified.

•  How will we package the meat and keep it cold?

•  Who will deliver it?

•  How will we market and advertise this service?

Packaging.

It took over 12 months of experiments and trial and error before O'Sullivans were satisfied with the final packaging process. Independent tests have been carried out in every weather condition and temperature. O'Sullivans packaging guarantees meat will stay below 4°C for up to 48 hours. Customers will receive theirs within 24 hours.

Who will deliver it?

O'Sullivans discussed their idea with a number of courier companies. All were impressive and keen to do business. Fastway was the company which was chosen. Their track record is excellent. They are reliable and have a very good tracking system. They collect Sulmeat boxes every weekday and they guarantee delivery to its destination between 9am and 5.30pm the next day.

How will we Market and advertise this service?

O'Sullivans considered the various options, but eventually decided by far the best option was to open an online traditional Butcher Shop. That way it is very convenient for customers to browse through the various products. It was decided that the website would be user friendly and easy and interesting to navigate. O'Sullivans official title is Sulmeat Ltd. so the SULMEAT.COM domain was chosen.
